Introducing RAMON CANALS’ sustainable and vegan cava, named MARTA. This sparkling wine is crafted using native grape varieties from the Penedés region, specifically Xarel.lo, Macabeo, and Parellada, all sourced from 100% certified organic vineyards. After maturing for over 24 months in our cellars, MARTA Joia achieves a refined elegance and complexity. VINEYARD INFORMATION_ Located in EL PENEDÉS. Fully CERTIFIED as ECOLOGICAL. Appellation_ DO Cava. Sub-regions include Upper Penedés (Parellada) and central Penedés (Xarel.lo and Macabeo). The climate is characterized as temperate Mediterranean, with clay-loam soils that ensure optimal drainage and moisture retention. The vineyards are planted at varying altitudes_ 130m for Xarel.lo, 280m for Macabeo, and 315m for Parellada. Average annual rainfall is about 465 liters per square meter. WINEMAKING PROCESS_ Harvest_ Grapes are handpicked, starting with Macabeo in early September, followed by Xarel.lo in mid-September, and concluding with Parellada at the end of the month. Grape Processing_ The juice is extracted using a pneumatic press, focusing exclusively on the flower must. Each variety undergoes fermentation separately in stainless steel tanks under controlled temperatures. SECONDARY FERMENTATION_ Base Wine Composition_ Xarel.lo, Macabeo, and Parellada. Bottling occurs in the first week of January, with fermentation temperatures ranging from 15 to 18 ºC. The aging process lasts for over 24 months in bottles.
